I created a test store and products/offering using this tutorial. I then checked the products in the dashboard to edit them, but can’t seem to edit the price I’ve initially set. I can only edit the name/customer facing details. Is this intentional?

Indeed, you can't edit the base price of a consumable in the Test Store.
However, since it's just for testing, you can easily recreate another one / delete it.
