I don’t see a way to define a free trial in the test store. I would like to verify that my paywall is working correctly and showing the right messages. What is the best way to test this?

Free trials are not available yet in the Test store since this is the first version. New features like introductory trials will be added in the future.
If you want to test free trials, you can use the stores sandbox environment.
