are the “latestExpirationDate” from the SDK or the “expiration_at_ms” from webhook events equivalent to the renewal date? I can't find a dedicated renewal date field, and I wonder if these fields are updated each time the subscription is renewed.

`latestExpirationDate` is the date when the subscription will or has expired. If the date is in the future, it means that the customer has an active subscription and it will expire - if not renewed - at that moment. You can treat it as the renewal date but you should also check if the user willRenew or not.
