I need to attach some custom metadata to a user’s payment (recurring subscription or a product one time purchase) and receive the data in my webhook. Is there anyway to do this? Sounds like a useful feature, but could not find any answer in the docs

That’s not a feature that we have available, but I can submit this to our product team as a feature request on your behalf.
